Very similar in appearance to a pancake, dorayaki is made up of two circular pancakes made from fresh flour and ingredients of Japanese origin. Its traditional filling is anko, a sweet confection made from candied azuki beans, but Takashi Ochai wanted to incorporate new flavours that take this icon of Japanese pastry to another level.
